Zucchini Cookies

Ingredients:
  • 1 cup grated zucchini
  • 1 cup sugar
  • 1/2 cup butter
  • 1 egg, beaten
  • 2 cups flour
  • 1/2 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup raisins or chopped nuts or both
Directions:

In a mixing bowl, cream sugar and butter. Add 1 beaten egg. Mix all dry ingredients with the grated zucchini. Add to the creamed mixture. Drop by teaspoon onto baking sheet and bake at 375F for about 8 minutes.
