Rich Roll Cookies

Recipe creator's name:  Paula Diekhoff

I've made these cut-out cookies for years and they are wonderful. Many people have asked what cookie recipe I use and I always give them a copy of this one. Recipe comes from the 1973 printing of The Joy of Cooking.

Preparation time:  10 minutes
Total time:  2 hours or more
Servings:  36
Ingredients:
  • 1 cup butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 2 1/2 cups sifted flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
Directions:

Cream the butter and sugar. Then beat in one egg. Finally, add salt and vanilla and the flour, in small amounts. Blend well. Chill dough 3 to 4 hours before rolling. Preheat oven to 350 degrees. Roll and cut. Bake for 8 to 10 minutes or until slightly colored. Decorate if desired.

Notes:
Makes about sixty 2-inch cookies
