Kentucky Derby Pie

Ingredients:
  • 2 eggs, lightly beaten
  • 1 cup sugar
  • 1/2 cup melted butter
  • 4 Tbsp bourbon
  • 1/4 cup cornstarch
  • 1 cup chopped pecans
  • 1 cup semisweet chocolate chips
  • 1 (9-inch) unbaked pie shell
Directions:

1. Preheat the oven to 350°F.

2. In a large bowl, combine eggs, sugar, butter and bourbon. Beat well. Add the cornstarch and beat well.

3. Stir in the pecans and chocolate chips. Pour into the pie shell.

4. Bake for about 45 minutes.
