Hawaiian Fruit Cake

Ingredients:
  • 3 cups flour
  • 3 cups sugar
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 large can crushed pineapple (undrained)
  • 1-1/2 cups coconut
  • 1-1/2 cups chopped walnuts or pecans
Directions:

Stir dry ingredients in large mixing bowl. Add all other ingredients and stir by hand until mixed well. Bake in greased/floured or lined 9x13 cake pan. Bake at 350 degrees for one hour. Frost with cream cheese frosting (canned is fine). Scrumptious!

Cream Cheese Frosting

1/2 c butter, room temperature
8 oz cream cheese, room temperature
2-3 cups powdered sugar
1 t vanilla

Cream butter and cream cheese together with mixer, adding vanilla. Gradually add powdered sugar until desired sweetness and consistency.

Notes:
This recipe was given to me by a local nursing home resident whom I met while waiting for an eye appointment. She told me she created this recipe years ago while living in California. It is now a family favorite and there isn't usually any leftover cake after a family get- together.
