1. Soak the rice noodles for about an hour in cold water. Drain.
2. In large skillet, heat oil for 30 seconds over medium-high heat. Add shrimp and stir-fry for 1 minute. Add eggs and stir-fry for 2 minutes. Stir in the noodles, paprika, fish sauce, sugar, and vinegar. Stir-fry for 1 minute.
3. In small bowl, stir scallions, bean sprouts, garlic, and cayenne. Stir into noodle mixture and toss well. Spoon into a serving dish. Garnish with lime wedges.
