This dish is a favorite for backyard BBQ parties, tailgate parties or any large gathering of friends. It can be made ahead and is very good at holding for long periods of time. All prep can be done outdoors on the grill.
The night before, clean and de-fat the chicken thighs. Then place in large plastic baggies with Italian dressing. Allow to marinate overnight.
When ready to cook, remove from marinade and season with chicken rub.
Get your grill as hot as possible. Sear each side of the seasoned thighs for about 10 minutes each. You want a nice dark sear on each piece....this step is NOT to cook the chicken through!
Once seared, place in 1/2 chafing pan and pour a liberal amount of BBQ sauce over the top. Lightly cover with foil, cool grill to about 200-250º and lightly simmer for about 45 minutes.
