These pancakes are a very healthy breakfast, and tasty too!

  • 2 Cups Flour (1 Cup All-Purpose/1 Cup Whole Wheat)
  • 2 Tbs. Brown Sugar
  • 2 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 2 Eggs
  • 4 Tbs. Canola Oil
  • 1/2 Tbs. Vanilla
  • 2 1/2 Cups Buttermilk, or more to desired consistency
  • 1/2 Cup Ground Flax Seed
  • 1/2 Cup All-Bran Cereal
  • 1 Cup Old-Fashioned Oats
  • Optional: 1 tsp. Cinnamon
  • Optional: Chocolate Chips
  • Optional: Pecans
  • Optional: Mashed Sweet Potato

In a large batter bowl, mix the first 5 dry ingredients. Make a well in the center of the dry mix and add the eggs, canola oil, vanilla and buttermilk. Stir to blend, but don't overmix. Add the ground flax seed, the All-Bran, and the oats. Stir to mix. Add the optional ingredients if you choose.
If time permits, allow the batter to rest for 15 minutes, but it isn't necessary for good cakes. The batter will be thick, so adjust the buttermilk by adding more for thinner cakes.
On a hot griddle or pan, lightly spray with cooking oil and wipe any excess away with a paper towel. Make your cakes the desired shape and size you like!

I often put chocolate chips in my children's cakes after i pour the batter on the griddle, that way the chips are only in the cakes they eat.
