1. Preheat oven to 350°F. Oil a 2-quart baking dish.
2. In a large skillet, sauté sausage in a bit of canola oil for 8 minutes, or until thoroughly cooked. Transfer to a large mixing bowl and add bread cubes.
3. Add oil to a large skillet; sauté onion, apples, celery, and scallions for 7 minutes on low, stirring frequently. Season with salt. Transfer to mixing bowl.
